love this potato salad. make it all the time for parties. I just use roasted red bell peppers that come in the jar to help me out in kitchen. I also usually just use only red potatoes. this is a great dish during summer days and you are having a party/gathering and you dont want to serve a potatoe salad with mayo in it. This dish is just perfect. "

So good! I only put 3 serrano chilis, because thats all I had. And I only had a large can of fire roasted diced tomatoes, so I put about 4 tablespoon of tomatoes, draining as much liquid as possible. I also did add the onion at the last pulse, too. This was very good. I think I did need more tomatoes from the can, though. This was really spicy, too....

Made this last night. The only thing I did different was I used fire roasted tomatoes, and used only one chipotle chili, and 1 teaspoon (or less) of the adobe sauce. But used a little more than the recipe asked for on the oregano, not much more, just a little. And this came out delish!!! I put some colby cheese on my serving and it was just so good!...
