Reviewed Mini Spinach and Mushroom Quiche
"ABSOLUTELY DELICIOUS! I made these for a wedding shower and they were gobbled up in no time! I left out the mushrooms since the bride didn't want any, and they still came out perfect. Definitely make these the night before, because they do take more time than you'd think. Be sure to use more than just a light mist of cooking spray in the muffin tins so they come out easier. (I just used a light amount of Pam the first batch and some of them stuck when taking out. For the subsequent batches I used more and they came out perfect!) "
