I really enjoyed this. I adapted a bit. The pears in my market weren't ripe, so I used an asian pear-worked great. Also had some pomegranate seeds in the fridge and tossed them in at the end. This worked out beautifully. I bought the filets, then searched for a recipe, so didn't have everything suggested. I only had chicken stock, and no marsala, but used red wine and added a bit of good balsamic vinegar, and it was a good substitution. The meat turned out perfectly per recipe. I was surprised at how rich and delicious this was, especially since the soup has few ingredients.
I made it for a dinner party, and one of my guests was on a diet, so I reserved some of the soup prior to adding the bread. It was still delicious.
My secret tip: take the rind from the parmesan (you will have some if you buy good cheese)...
