This was wonderful. I didn't have enough fresh mozzarella so I used shredded along with. I think it would be just as good with either. The sauce is delicious. I made it using fresh tomatoes. I am going to make more sauce and freeze it for winter dishes. I liked this fast low calorie way of preparing the eggplant.

I goofed too. I guess it pays to read! I combined the crumbs and flour by mistake. Added more seasonings. Dipped in the crumb mix then eggs then back in crumbs and then let it rest for about 30 min. while I prepared the remaining. I must have not let the broth reduce enough. The sauce was runny, but tasty. We ate it and my husband liked it."

This is delicious! I took it to a party where others had brought artichoke dip also. Hands down this was the best. I made a half recipe. Using about 1/2 bag or 4 cups fresh spinach gave it a nice bright color. Don't be afraid of the lemon zest. It gives it a nice bright flavor. Add a little at a time if you are afraid of the taste.
