There were several "ends" of cheese in the fridge, so I ended up using some champagne cheddar, jarlsberg, goat cheese and romano. It was delicious! To make this salad even easier than it already is, after massaging the kale, you can simply drizzle on additional olive oil, the honey and the additional lemon juice and toss well.
