I thought this was great. I considered emerils recipie as well. This was simple and easy to put together. After making the risotto I cooled it for an hour in the fridge. After mixing the rest of the ingredients the balls were simple to assemble. After every few, I rinsed my hands and left them moist. This kept them from sticking to my hands.

That's because the recipie is assuming you already have the risotto made. Anyone who read the instructions for the risotto would have known that because the cook time clearly says 1 Hour not 20 min. It's unfair to give this a low mark because you can't read and follow instructions. Maybe next time do more than a "quick read" if you're an inexperienced...
