I'll try it again, because the meat mixture was good, but after 25 minutes in the oven the cheese and tortilla strips were pretty much toast. At the 40-45 minutes called for it would have been burnt to a crisp.

These were a big hit at Christmas dinner, they were gone in minutes and even the kids were taking seconds. The store I went to didn't have Kabocha squash and only had 4 oyster mushrooms left, so I used butternut squash and some cremini mushrooms and it still turned out great!

I'll try harder to find the correct ingredients next...

These were great! So tasty and easy to make. I couldn't find mascarpone, so I added whipped cream cheese instead. Forgot to take them to Christmas dinner and am glad I did since then we got to eat them all :)

Absolutely to die for! I used unsalted fancy mixed nuts (cashews, almonds, pecans, brazil nuts) and they are fantastic. I'm also making them to give as Holiday gifts.
Hubby liked them so much I swear his eyes were rolling back in his head ;-)
