This is one of our favorites! However, I too found the meat too tough. I cook it to specifications in her recipe, but then pour everything in the crock pot and let it cook on low all day. The meat comes out very tender and it's ready whenever we are! I do check on it and add a little more wine, if needed and then a squeeze of lemon juice right"
