This was great!!! I'm such a big fan of chicken quesadillas so this was right up my alley. I can't believe that I've never made my own before. Well, this recipe will be a staple for sure! The taco seasoning added nice flavor. The only change I made was adding cheddar cheese along with the monterey jack cheese. Thanks Pioneer Woman!

Made this last night. Super easy and delicious! Had some carrots in the fridge so I added those to the soup for a little sweetness. Also added 1/4 tsp of turmeric for color. I did let it cook a little too long so some of the liquid was absorbed. It was very filling. All in all, a great recipe!

LOVE this dish! I didn't give it 5 stars because it's VERY spicy if you follow the recipe as written. I only use 1.5 tsp of red pepper flakes and it's still great. It's a super simple recipe that you don't need to buy 50 million ingredients to make. Wonderful flavor! Thanks Emeril!"

So delicious! This ended up being a Plan B meal since my chicken went bad. substituted the pancetta for bacon. I had fresh whole wheat linguine in the freezer. Wow! This is a new family favorite! I used the hot turkey sausage instead of the sweet sausage and also put some crushed hot peppers in the sauce - we like things spicy in my house. I omitted the goat cheese and used shredded mozzarella. I also loved the noodle prep method. I absolutely love Ina - every dish has been a winner!!!
