Delicious! My family thinks this was amazing! I added herb de provence and instead of garlic (didn't have any on hand I used a tsp of garlic salt instead. Turned out crisp and juicy. The salsa was really good for this recipe, the mango and jalepeno really contradicted each other and kept each bite fresh. The pork loin was good, I made my own Jamaican Jerk rub and also hickory smoked the meat instead of roasting it. Contrary to what the title to this recipe says nothing is "grilled" unless the experimenter tweaks the recipe. ""
