Reviewed Oven-Fried Chicken

"Ina's buttermilk fried chicken is the best we have ever eaten. I added about 2 teaspoons of paprika to the flour mix and sometimes I add a little garlic powder but it is great either way. Fried and baked exactly as directed, the chicken is beautifully browned and very moist. A definite keeper in my recipe box.""

About Me

My name is Anne.  I am a 76 year old widow who raised 8 children, 7 boys and finally a daughter.  Cooking for that gang, and a hungry husband, plus a mother-in-law who lived with us.  Imagine cooking 3 lbs. of spaghetti pasta with 2 lbs. of ground beef made into meatballs and always homemade sauce which I have perfected.  Yikes, I shudder at the idea now. 

I would roast 2 chickens and stretch that into 3 dinners - 1st day was roast chicken, 2nd day was picking off the left over meat and boiling it with homemade noodles (we had chickens so had plenty of eggs), and 3rd day would boil the carcuses with vegetables for soup.  Nothing went to waste.

Now it is just me and cooking for one person is a challenge.  I generally make a little more for leftovers which I love but would appreciate any recipes for cooking for just one.

I watch Food Network on TV everyday and am particularly fond of Ina Garten.
