"Oh, the wonderful things that can be done with bacon fat!! I used pearl onions since I couldn't find cipollini onions anywhere, half expecting them to stay together, but two hours in the crock pot dissolved them to nothing. Next time, I'm just using a good sweet onion coarsely chopped. Serve this with a crusty bread to soak up that delicious gravy"

Reviewed Southern Biscuits

"This recipe is always a victory for me. I always double the recipe, and make really big biscuits. A double batch will yield about 10-12 biscuits for me. The best ones are always the biscuits that are in the middle, so they outer edges are soft and flaky instead of crusty. I also cook them for less time (about 12-14 minutes is plenty) to keep them from drying out.

Another suggestion - double the carrots and add some parsnips in with the mirepoix to sweeten the stew and add even more depth to the flavor.

Reviewed Oat Waffle

"Easily the best waffle recipe I have ever made, and I've made lots of waffles. I used to be strictly belgian, till that wafflemaker died and my GF got me a new standard wafflemaker. They've never been as good until the oat waffle graced my presence.

Crunchy, sturdy, flavorful, carries butter and maple syrup really well, or good just the way they are. They resemble frozen multi-grain waffles in a way, only much better.

Also, since the batter is oat-heavy, the gluten count is really low. The batter can take lots of abuse without getting tough. Very convenient!
