Reviewed Sausage, Beans and Broccoli Rabe Soup
"Really hearty soup - great taste, with just a few simple ingredients & quick prep time. I used 1 head of escarole instead of the rabe (only b/c I was unfamiliar w/ rabe). Loved the technique of mashing 1/2 the beans before adding, really makes a difference in the texture. I had leftover sweet sausage links that I had already parboiled, so I just sliced them & cooked them that way. Go easy on the salt, I added probably a bit too much for my liking, so I skipped the grated cheese at serving time. A keeper!"
Reviewed Cupcakes
"Made these one cold winter afternoon with my 5 yr old, who begged for cupcakes, but I didn't have a box mix. This was a great substitute, using basic ingredients that most people would have on hand. Gave it a 4 only b/c I did not use the icing part of the recipe (as suggested by some others). However, like the actual cupcakes VERY VERY much. 14-15 minutes was enough time for them to turn golden in my oven. They came out really light & fluffy (perhaps b/c I made them by handmixer & not in a processor?) They are still cooling, and my daughter has already eaten 2! Overall, 2 thumbs up!
