I didn't have time to make the entire recipe so opted to bake the muffin and frosting only. The muffin cupcake is quite moist. I guess the vegetable oil is the trick. For the frosting, I added a stick of cream cheese to make it thicker and then topped it off with chocolate sprinkles and a raspberry."

Very tasty - It is a keeper! I modified the recipe by replacing fresh corn with canned corn and heavy cream with half and half. I used what I had in my fridge and it came out just fine. I added one potatoe to make it creamier. I sprinkled some green onion on top for garnish."
