Wow, this dish sings with flavor. It's not all that time consuming, took about 1-1.5 hours to get everything to simmering day 1 and then day 2 was a breeze. After reading a number of cassoulet recipes, I decided to do a long slow roast in the oven on day 2. I brought it up to a simmer on the stovetop, then put it in the oven at 250 for about 4...

Dee-licious. Had a bunch of additional fresh herbs in my garden, so added thyme, chives, oregano and parsley to the mint and basil. Also added the oil mixture to cous-cous with a little parm-reg and it was a great complement. definitely recommend."
