Every year,I roast red peppers and preserve them so I have them on hand when I need them. This allows me to make this recipe in a very short time. I make a very larbe sandwich and then slice it in smaller pieces for little get-togethers. Guests really like them."

I cooked it for 11 minutes but it was too much. Next time I will start checking at 9 minutes as it continues to cook a bit when you take it out of the oven. I thought it would be a hit with the kids but they said it was too chocolatey?!?!?! They did like the cold raw batter though."

I could not stop eating these. My plantains were a little ripe so smashing them half way through the frying process proved a bit of a challenge but they were still delicious. I'm not sure how big a difference dipping them in the salt-garlic water mixture actually made though. Will try to cut out that step next time and see if they are still as good....
