My daughter made a gluten free version of this and it's by far the best I have ever had. Most gluten free pasta even al dente pasta won't hold up, and gets very mushy especially when reheated. This was fabulous, I have Celiac's so I substituted equivalent corn starch for the flour, and because my husband doesn't like bell peppers I didn't have them, so used Poblano peppers instead. I loved it followed to the tee because I didn't have the time to soak the beans first. I'm glad I did they had a nice firmness to them. All I did that was not posted and I always do for all soups is I turned off the heat and let it rest for 1/2 hour before eating. Cools it down and brings out the flavor. I don't know what the others did wrong...
