The only way I deviated from the recipe is that I forgot to make the brine ahead of time and cool it down. I took it straight off the stove and added ice and water to cool it down. These had a great flavor. I used only 4 slices of bacon and half an onion and I used water instead of chicken broth. I think next time I would drain off most of the bacon fat before adding the chicken broth/water. The beans ended up being a little greasy for my tastes. "
