If you can't find hushpuppy mix, if you're doubling the catfish recipe, you can use: 1 1/3 cups cornmeal, 1/4 cup flour, 2 tsp baking powder, 2 tsp sugar, 2 tsp garlic powder, 1 tsp pepper, 1/2 tsp salt, 1/4 tsp crushed red pepper. Halve everything listed above if you're not doubling the catfish recipe.

Great recipe! Very juicy and meaty and tasty. I followed the advice of another poster and used the Neely's barbecue sauce, and it turned out great. Great recipe, but we added a little bit of sugar to bring the taste out. The sugar helped a lot. It was a little bland without the sugar, but still ok; but much better with the sugar. We only used 10 ounces of crab, and halved everything else out, and it still yielded a bunch of crab salad in the end."
