This is the recipe that comes closest to the Ragu di Cinghiale withTagliatelle I had at a hunting lodge in Italy last fall. I admit to going off on my own a bit (I didn't have all the right herbs at the time), but will follow this recipe to the letter the next time I make it. The wine needs to cook down a bit if you are going to eat this the night...
