Reviewed Smothered Pork Chops with Apples, Onions and Cabbage

Jan 19, 2014 on FoodNetwork.com

Excellent! We had pork chops, apples and a cabbage in the fridge before we were heading out for a while, so this recipe combined all the ingredients we had on hand and produced a wonderful dinner! We will plan on making this dinner again and again! Don't change a thing!!

Reviewed Sweet Potato Oven Fries with Avocado Dip

Jan 14, 2014 on FoodNetwork.com

This was amazingly good! The recipe should say 'use only enough oil to coat'. That may avoid the sogginess some people experienced. I also used parchment paper instead of tin foil as someone suggested, and noticed it did absorb some of the oil. The avocado side is REALLY good! I mashed it with a fork instead of the blender because we like a little...

Delicious! We've tried Paula Deen's, which is good, but this was excellent! A hearty red wine was a nice accompaniment.

Reviewed Pan Seared Duck with Red Chile Pear Sauce, Bourbon-Brown Sugar Asian Pear Relish and Potato-Blue Cheese Cakes

Oct 10, 2013 on FoodNetwork.com

OMG! My wife and I love duck, and are always looking for new recipes, but after having this, we may just stop looking! My only variations were to use gorgonzola for the blue cheese in the potatoes, and a habanero in the sauce (it was very spicy). The sauce is time consuming, but worth it, and the pear relish is wonderful!

Yum-I made it just as printed. I think I need to get smaller martini glasses-this portion looked so small in my martini glass. Keeps me honest on portion control though!"

Reviewed Steamed Mussels with Leeks, Garlic, Thyme, White Wine, and Butter

Apr 8, 2013 in Food Network Community Toolbox on FoodNetwork.com

Very tasty! I made the whole recipe for just my wife & me (we're BIG mussel fans, and we enjoyed every bite! Caution: limit the amount of bread you put out, because the sauce is just way to delicious to stop eating!"

Reviewed 1770 House Meatloaf

Mar 29, 2013 in Food Network Community Toolbox on FoodNetwork.com

I'm usually not much of a meatloaf fan (my wife is), but this was REALLY good! My only change was to the sauce: I made a roux with the butter (added about 2T flour), then added the stock and garlic. Saved time; thickened very quickly and nicely, and didn't have to worry about overcooking. However you make this, DO NOT skip the sauce! Oh, I also on"

Reviewed Oven-Roasted Cod Crusted with Herbs

Mar 6, 2013 in Food Network Community Toolbox on FoodNetwork.com

My wife and I really enjoyed this dish! Deviations: I brushed both sides of my cod loins with oil, rubbed in just the herbs on both sides, drizzled a little more oil, then dredged both sides in panko. Turned about half way through baking, then just a minute or 2 under the broiler. I think the lemon really brought this to life! Nice with a Sauvigno"

Reviewed Broiled Sockeye Salmon with Citrus Glaze

Feb 11, 2013 in Food Network Community Toolbox on FoodNetwork.com

Delicious! The glaze just started to carmelize, giving a nice crunch and sweetness at the same time! I usually do salmon on a cedar plank, but this recipe will definitely be added to our rotation!"

Reviewed Michael's Favorite Oxtails with Buttered Rice

Jan 7, 2013 in Food Network Community Toolbox on FoodNetwork.com

My wife and I loved this dish! I cooked it in a crock pot 1hr on high and 3 hours on low. Next time will add an additional hour on low. I will also try adding some red wine in with the water. People's comments about over-seasoning caused me to under season mine, but that'll be easy to correct next time."

Reviewed Salmon Baked in Foil

Dec 27, 2012 in Food Network Community Toolbox on FoodNetwork.com

Simple and delicious! I was skeptical of tomatoes with salmon, but it really works! Based on other reviews, I baked at 375. And because my fillets were < 1 inch thick, 20 minutes was enough time."

Reviewed Rabbit in Potacchio

Sep 26, 2012 in Food Network Community Toolbox on FoodNetwork.com

Excellent! Easy and delicious! Only change was that I only had 1 lemon in the house, but I think it was just the right amount of zest for our tastes. My wife and I are always looking for new rabbit recipes, but after trying this one I think we'll stop looking! Served with cheese polenta and a zinfandel/syrah blend. "

Reviewed Classic Chicken Parmesan with Oven-Roasted Tomato Sauce and Smoked Mozzarella

May 9, 2012 in Food Network Community Toolbox on FoodNetwork.com

Sauce is very good; intense, almost tastes like sun-dried tomatoes. I pounded the chicken just a bit to even out the pieces, and it cooked perfectly following recipe times. Next time I'll try to shred the mozzarella, we think it might melt a little better evenly. The smoky taste is great. Portions were very generous, especially the pasta. "

Reviewed Spinach and Ricotta Gnudi

Apr 28, 2012 in Food Network Community Toolbox on FoodNetwork.com

Gnudi were perfect, very light and delicate! But we thought the strong porcini flavor overpowered them just a bit. Would make again, maybe swap out some porcini for a less strong mushroom. "

Reviewed Sausage-Stuffed Mushrooms

Apr 3, 2011 in Food Network Community Toolbox on FoodNetwork.com

Really outstanding! My variations: I baked the oil&Marsala coated mushroom caps for about 5 minutes to let them just soften a bit. I also added a little (1T?) Marsala to the stuffing mixture, as well as a little crushed red pepper (because it makes everything taste better!), and also made a panko-cheese topping with a little melted butter, and sprinkled...

Reviewed Fresh Pasta Rollatini with Spinach and Ricotta

Feb 21, 2011 in Food Network Community Toolbox on FoodNetwork.com

Unlike some other reviewers, I actually MADE this recipe! (I wonder why people rate recipes they haven't tried?). My wife and I look forward to Raffy's occasional visit, and enjoy their banter, as do they, apparently! Anyway, this recipe was delicious! Too good not to try! (We used a larger pot, per Raffy's suggestion!) "

Reviewed Pancetta Stuffed Flounder with Boiled New Potatoes and Hollandaise Sauce

Jan 20, 2011 in Food Network Community Toolbox on FoodNetwork.com

Very tasty! I used bacon instead of pancetta, and only a portion of the rendered fat for the sautee. We thought with all that fat we'd skip the hollandaise, and didn't miss it at all. The bacon flavor was smoky and delicious. Also, my fillets were pretty thick, so I made a 'sandwich' instead of 'rollup'. A smoky Pinot Noir was an excellent wine pairing....

Reviewed Portobello Mushroom Lasagna

Nov 2, 2010 in Food Network Community Toolbox on Food Network

Excellent! Modifications: used a variety of wild mushrooms as she did on the show. Also sauteed some garlic in the melted butter before adding the flour for the white sause. Also added some fontina cheese to the white sauce, because was afraid it would be too bland. Also, nutmeg sounded like WAY too much, used probably about 1/4 t. Would make again...

Reviewed Salmon with Lemon, Capers, and Rosemary

Oct 27, 2010 in Food Network Community Toolbox on Food Network

Wonderful! Followed recipe exactly. Even though it didn't sound like anything outstanding, it was! Served w/ Giada's broccoli rabe, sausage and orochiette as a side. Excellent match! Had w/ a nice Pinot Grigio, though we think a sangiovese would also be a good match with broccoli rabe as a side.
