My Activity

Reviewed Steamed Mussels with Leeks, Garlic, Thyme, White Wine, and Butter

"Very tasty! I made the whole recipe for just my wife & me (we're BIG mussel fans, and we enjoyed every bite! Caution: limit the amount of bread you put out, because the sauce is just way to delicious to stop eating!"

Reviewed 1770 House Meatloaf

"I'm usually not much of a meatloaf fan (my wife is), but this was REALLY good! My only change was to the sauce: I made a roux with the butter (added about 2T flour), then added the stock and garlic. Saved time; thickened very quickly and nicely, and didn't have to worry about overcooking. However you make this, DO NOT skip the sauce! Oh, I also on"

Reviewed Oven-Roasted Cod Crusted with Herbs

"My wife and I really enjoyed this dish! Deviations: I brushed both sides of my cod loins with oil, rubbed in just the herbs on both sides, drizzled a little more oil, then dredged both sides in panko. Turned about half way through baking, then just a minute or 2 under the broiler. I think the lemon really brought this to life! Nice with a Sauvigno"

Reviewed Broiled Sockeye Salmon with Citrus Glaze

"Delicious! The glaze just started to carmelize, giving a nice crunch and sweetness at the same time! I usually do salmon on a cedar plank, but this recipe will definitely be added to our rotation!"

Reviewed Michael's Favorite Oxtails with Buttered Rice

"My wife and I loved this dish! I cooked it in a crock pot 1hr on high and 3 hours on low. Next time will add an additional hour on low. I will also try adding some red wine in with the water. People's comments about over-seasoning caused me to under season mine, but that'll be easy to correct next time."

Reviewed Salmon Baked in Foil

"Simple and delicious! I was skeptical of tomatoes with salmon, but it really works! Based on other reviews, I baked at 375. And because my fillets were < 1 inch thick, 20 minutes was enough time."

Reviewed Rabbit in Potacchio

"Excellent! Easy and delicious! Only change was that I only had 1 lemon in the house, but I think it was just the right amount of zest for our tastes. My wife and I are always looking for new rabbit recipes, but after trying this one I think we'll stop looking! Served with cheese polenta and a zinfandel/syrah blend. "

Reviewed Classic Chicken Parmesan with Oven-Roasted Tomato Sauce and Smoked Mozzarella

"Sauce is very good; intense, almost tastes like sun-dried tomatoes. I pounded the chicken just a bit to even out the pieces, and it cooked perfectly following recipe times. Next time I'll try to shred the mozzarella, we think it might melt a little better evenly. The smoky taste is great. Portions were very generous, especially the pasta. "
