Reviewed Eggs in Baskets

"These were a neat breakfast idea...in theory. My hashbrowns didn't turn out crispy and I wasn't sure EXACTLY how long to cook the eggs so they were overdone. I'm definitely going to try this again and hope for a better outcome. I was concerned that the 'baskets' wouldn't come out of the muffin plan cleanly, but once I scraped around the edge with a butter knife they popped out ok with a rubber spatula. I used cheddar cheese because it's what I had on hand. I was a little leary about the proscuitto, because frankly it's not very tasty, but when it was broiled with the maple syrup it was great! I will try this again, hopefully giving it 5 stars next time. Happy cooking!
