Reviewed roasted tomato caprese salad

May 19, 2014 on FoodNetwork.com

This is a delicious recipe, especially when you are craving garden fresh tomatoes before tomato season. I have prepared it with and without the garlic. Both are delicious. I used it as a bruschetta topic on the most recent preparation by lightly browning baguette slices, placing a slice of fresh mozarella on top and slighting melting in the oven,...

Reviewed potatoes gratin

May 19, 2014 on FoodNetwork.com

This is my go-to potato recipe. The only thing I would caution is trying to assemble the dish too far in advance before baking. When I have prepared and assembled it an hour or less before baking, it has turned out great. The last time I made it, I attempted to assemble the night before. Not a good idea. While it was still very tasty, it separated...

Reviewed Easy Tomato Soup & Grilled Cheese Croutons

Mar 19, 2014 on FoodNetwork.com

I really wanted to like this soup better than I did. If I were to make it again, I would definitely reduce the amount of salt. I used unsalted chicken broth and added the 1 tablespoon of salt according to the recipe. Way too salty! As other reviewers have mentioned, I too would reduce the amount of onion.

This chicken is absolutely delicious! It has become one of our favorite family Sunday dinner recipes. It makes quite a bit, which is wonderful because the leftovers are delicious the next day. It is definitely suitable for a casual family dinner or as a fancier dinner for company. Mashed potatoes, parmesan mashed potatoes, rice or noodles are all...

Reviewed creamy spinach and mushroom lasagna

Feb 19, 2014 on FoodNetwork.com

Great recipe! I added shitake mushrooms with the creminis, since I had them on hand, and used boxed lasagna noodles, cooked as the recipe directed. This was a perfect, easy meal served with a mixed green salad and bread. The entire family loved it and I will definitely make it again!

Reviewed shortbread cookies

Feb 19, 2014 on FoodNetwork.com

Excellent cookies! I did not have any problem with the dough being crumbly, as other reviewers noted. My butter was room temperature and very soft. I think that is the key. I decorated them with sugar and drizzled a little chocolate on top, instead of dipping them in chocolate. That worked well and they stay very fresh and crispy in an airtight container....

These cookies have become a family favorite! I sometimes add semi sweet and white chocolate chips to the batter. Delicious!

Reviewed baked chicken breasts with parmesan crust

Feb 12, 2014 on FoodNetwork.com

While the chicken was very flavorful, the crust did not get as crispy as I would have liked. Since the cooking spray was not giving the desired browning results, I drizzled the chicken with a little olive oil, which helped. Coating the chicken with Dijon mustard gave a great flavor and kept it nice and moist.

Reviewed Slow-Roasted Filet of Beef and Basil Parmesan Mayonnaise

Dec 28, 2013 on FoodNetwork.com

Normally, I make Ina's beef tenderloin cooked at a high temperature and it is perfect every time. I decided to give this version a try, mainly to avoid a smokey kitchen, which is the only drawback of the high temp version. While the slow-roasted version was moist, it did not have the lovely crusty outside and perfectly med. rare doneness as Ina's...

Reviewed Crab and Ricotta Cannelloni

Oct 27, 2013 on FoodNetwork.com

I've made this recipe several times and only modified it a little bit by adding Old Bay Seasoning to both the crab/ricotta mixture and the Bechamel. The amount of seasoning you add depends upon your taste. Normally I add about 1 teaspoon to the crab/ricotta mixture and 1 teaspoon to the Bechamel sauce. If you too are a Marylander with a love of Old...

Reviewed Buttermilk Biscuits

Feb 5, 2013 in Food Network Community Toolbox on FoodNetwork.com

These biscuits are tender, light, and flaky. They are very easy to make. I used a shaped cookie cutter instead of the pizza cutter and they turned out great. The mixture of the cake flour and regular flour really made the biscuits lighter than other recipes using only regular all purpose flour."

Reviewed Ham and Split Pea Soup

Dec 30, 2012 in Food Network Community Toolbox on FoodNetwork.com

This soup is absolutely delicious! My husband, who swore he hated split pea soup, raved about it. Since I didn't want to wait 8 hrs decor the dried peas to soak, I used the quick soak method; place rinsed peas in a saucepan, cover w"
