Reviewed Beet and Cabbage Borscht

I tripled the recipe in order to use up a whole cabbage and some beets from my CSA. I made the recipe as written and my fiance and I liked it (I estimated the cumin after tripling to be 1 tsp and it tasted right). Make sure you use a white wine you like (or substitute vermouth).

I used Annie's Naturals Vegan Worcestershire Sauce. Instead of on a sandwich I ate them with a fork on top of a bed of sauteed mushrooms and raw spinach. Love!"

After reading other reviews, I also added 1/3 cup of water instead of the full amount and it was just right. I liked this recipe with beef but I don't eat much meat, so now I substitute chickpeas for beef and double the tomatoes and frozen peas. Delicious with bread or brown rice.""
