Reviewed spaghetti alla carbonara

I made this EXACTLY as directed and it was awesome! Rich and satisfying enough for my husband to have a second helping, but light enough for me who is not a "creamy sauce" fan. Whipped up in minutes after coming home from work, so I feel good about providing a home made meal without massive effort. Will be part of my regular rotation from now on.

The chicken WAS very moist and tender, but the coating was not crispy at all, even with extra cooking time. I added hot sauce to the mayonnaise for some kick and omitted the cheese. I think next time I will reduce the mayo and use panko crumbs to shoot for more crunch. I like the concept and the speed, but it needs some tweaking."

I have used this recipe for the past five years and it's fantastic. My only alteration is that there is no way that I have been able to cook the bird at 500 degrees for any period of time as Alton recommends at the beginning of the roasting period without the oven smoking and the smoke alarms going crazy. Delicious - just like my Mom's baked chicken. I used thighs and legs since they were on sale and soaked the chicken in milk for a couple of hours before baking (my grandma's trick). I did replace the butter with olive oil since DH and I are watching cholesterol. Served it with roasted potatoes and steamed broccoli. Yum!"

My family loved this! I agree with other reviewers that the final product is a bit sweet, but we really enjoyed the sweetness. Personally I sometimes find sauerkraut bitter, but not this time. I also felt that the sweetness balanced the seasoning in the sausage.The prep was pretty easy and not too time consuming. Great with unsweetened applesauce...
