My Activity

Reviewed Chocolate-Coconut Granola

"The taste is awesome, but i had a devil of a time with the chocolate. It seized on me TWICE!! The first time i threw it out because i couldn't get it to loosen. The second time, i just mashed it into the granola the best i could. That chocolate is SO expensive, i couldn't bear to throw out the second batch. I have no idea why it seized - not "

Reviewed Christmas Stuffing with Bacon

"Crazy good. I created a shortcut by using Royal Blend wild rice, followed the directions, but cooked the rice in chicken stock. I skipped the pearl onions and just chopped a large onion instead. Also substituted the hazelnuts with toasted pecans and let me tell you, this dish is heaven. Don't save it for the holidays - serve with roast chicken"

Reviewed Buttermilk Biscuits

"For years, I made buttermilk biscuit recipe from Southern Living; they were fine. But these are...amazing. The dough feels like velvet in your hands. The biscuits come out flaky and tender with such an incredible butter taste. No kidding, these are seriously good biscuits and don't be intimidated by the directions; it was easy as pie. "

Reviewed Eggplant Gratin

Sometimes when I have the grill out, I will grill a bunch of eggplant and then store for use later in the week. That saves a bunch of time fo"

Reviewed Chicken with Mustard Mascarpone Marsala Sauce

"Really quick and easy, but I made a few changes. I used full chicken breasts that I browed in the pan and then finished in the oven while I made the sauce. Boneless skinless chicken breasts are hard to brown without drying out and they have so little flavor. The sauce was a bit thick, so I loosened with some pasta water. When I added a bit of "

Reviewed Grilled Tuna Rolls

"Crazy good recipe. I am a recipe-hound; have Ina's cookbooks and follow her show as well as many others, but I gotta tell ya this is hands-down the best dish I have ever made. I have made 100's of recipes from Food Network, but I've never written a review before. Had to do it for this one because i can't get over how good it was. Did not include the red onion because here in Florida, they are incredibly harsh. Might try it with a Vidalia next time, but i didn't miss it because the scallion added great flavor. Don't be tempted to substitute the arugula with a milder lettuce. This dressing combined with the arugula adds a pow factor that can't be beat."
