After making this, I think I've figured out why this is a love it or hate it recipe. It's the 1/4 cup flour used to make the roux. That's a lot of flour compared to the amount of butter being used. I reduced the flour to 3T and browned it carefully. If using the entire amount of flour, it will have to be browned thoroughly or the dish will end up "
