This is also a FABULOUS banana cake recipe. I used the exact recipe but cut the sugar to 1 1/3 c. (Yes, 1/ 1/3 cups and it was PLENTY sweet.) I did have extremely ripe, aka sweet - bananas, but 2 c. of sugar is way too much, even for the cupcakes.(Trust me, I'm an experienced baker) - especially if you ice the cupcakes or cake.
