I live at 6200 ft., so I appreciated the advice about high altitudes. I used a candy thermometer and heated the liquid to 195 degrees. It didn't start forming curds until it had sat about 5 minutes. But the result is sensational! I will never buy ricotta from the store again. "

Yes, it takes a long time. But it was so worth it! I spent a blizzardy day making this, and everyone loved it! Snowed in...this soup.. life is good! I used chicken broth instead of white wine because that's what we had in the pantry. I put in the heavy cream but not the half and half. Even my granddaughter, who is very suspicious of veggies...
