Reviewed Almond Rice Pilaf

This an excellent side dish. A variation I make is to omit the parsley, but add 1 tablespoon /- of curry powder and when finished cooking, add the almonds and some black raisins. The it's delicious with a plain entree such as broiled swordfish or creamed chicken, and the colors are fabulous. Seve with steamed broccoli or green beans.
