"This is my favorite cheesecake to make -- it's always a winner. However regarding the instructions above, the notion that this only needs 45 minutes to cook is WAY off. An 8-inch cheesecake is going to be very thick, plus doing the water-bath thing increases the time significantly, plus this thing only cooks at 325 degrees. Count on at least half an hour more than what it specifies.
