After reading the reviews, I : 1) Used high-end crushed tomatoes for the sauce; 2) Added 2 tablespoons of tomato paste to the sauce; 3) Bought both FRESH Genovese pesto and FRESH mozzarella from Trader Joes; 4) used fat free ricotta and 5) I baked the dish for 15 minutes at 375 degrees and then put it under the broiler for 2-3 minutes. Like others have said, this one's a keeper! It's a great way to put some zing into cauliflower. I usually prefer cauliflower uncooked, but this recipe is a game-changer that makes me want to cook it from here on out.
