Reviewed Banana Nut Muffins
"These are the most delicious banana muffins I have ever tasted! I think using 4 bananas, 2 which are beaten with the eggs and sugar, and then the other 2 mashed and folded in with the nuts, really brings the banana flavor out. They were easy to do and I actually got 18 out of this batch!"
"This is a great way to use Panettone. I actually cut the recipe in half because I had used part of the loaf to make Giada's French toast recipe. This dessert made a big hit in our household especially with some that don't like bread pudding. What I would do differently though, is bake the pudding mixture in another large pan filled with hot wat""
Reviewed Garlic and Citrus Chicken
"I cooked this dish last evening and it turned out to be a keeper! The citrus really lightens up the chicken and contributes to the moistness and flavor. I would probably not use a whole orange or whole lemon as it seemed to be almost too much to stuff in a four and a half pound chicken. I didn't have any orange juice concentrate so I just used ""
Reviewed Panettone French Toast
"I made this for Christmas Day breakfast and it was wonderful! What a great way to use Panettone. I had never bought this bread before and was reluctant since I didn't know how to use it. The bread by itself is good toasted as well. Tonight I'm going to make Giada's bread pudding with the rest of the loaf! The only thing about this recipe that ""
"I made this dish last evening and used my own marinara sauce with a cup of pinot grigio added. It was delicious and we all enjoyed it! I read that some of the reviewers found the meat tough and chewy, but ours was fork tender. I pounded and scored the flank steak, which was also choice grade and I think that makes a difference. After I put the ""
"These pancakes were light and delicious! This recipe didn't call for melted butter which most pancake recipes do and I was afraid they might stick to the griddle. I took the liberty of adding 2 Tbsp. of melted unsalted butter. I had no problems with sticking. The sauce was really good and we also tried them with maple syrup which also was delici""
Reviewed Free Range Fruitcake
"I wasn't a huge fan of fruitcake mostly because it contained so many candied fruits and tasted artificial. This recipe is the best! It contains all dried fruits and reminds me more of the British Christmas cake minus the marzipan. This cake is very moist, has really good flavors and gets better the longer it sits and the more you spritz it with""
Reviewed Roast Breast of Turkey
"I've made this turkey breast a few times and it's really delicious! It's also easy and uncomplicated. I did reduce the salt amount by half and it didn't seem to make a difference to me.""
I am a retired nurse and I really enjoy cooking, baking(I make all our bread.) I also like to entertain and have people over for dinner and holidays, sometimes the best get togethers are last minute invitations. I would say that I'm pretty passionate about cooking. I enjoy trying new recipes and subscribe to a couple of cooking magazines and I especially like to go on to the Food network to look up recipes that I can't find in all of my cookbooks of which I have many! I also love music and my husband and I are avid concert goers to our local Boise Philharmonic as well as hearing other orchestras around the USA. I also like gardening and am a book lover and of course I have way too many books, mostly fiction! My pet peeves are recipes that have ingredients that require one to go to a specialty food store--if the dish doesn't turn out the product sits on the shelf unused and since it is usually expensive it's a waste of money. I really like to cook because it's just great to have something very fresh that tastes good because there was time and effort spent on the food.
I like French and Italian cooking and I also like to make standard American dishes like pot roast, meat loaf, roast chicken. I really love slow cooking meals made in one pot like stew and brisket. My family really likes my chicken with tarragon sauce. I don't really have a favorite restaurant. I like Chilis for ribs, Goodwood Barbecue for pulled pork, and Jakers because they serve smart plates, smaller portions that are just right for my husband and me.
