Reviewed Eggplant Parmigiana

"I made it tonight and what a hit! It served 5 adults and probably would hav served 4-5 more but that was fine because we love leftovers! We have a gluten free exchange student living with us so I exchanged gluten free flour for the regular flour and put about 5 slices of her gluten free bread in the food processor with the thyme and oregano for the breadcrumbs and it tasted wonderful! So much better tasting and less filling than lasagna and a perfect substitute for our gluten free girl while still being a delicious treat for the rest of us! A keeper for sure!
