Reviewed Cheesy Shrimp-and-Grits Casserole

7 hours ago in null on Food.com

This is comfort food at it';s best...southern style! I mixed 1 Tbs. olive oil, salt and pepper to taste with 1 1/2 lbs. shrimp and roasted them at 400 degrees for 5 minutes. I grated 8 oz. of Cabot Pepper Jack cheese in the casserole itself and finished it off with more cheddar on top. And I always check who likes something spicy or not so...

Great recipe!! Kick it up a notch and add 3/4 spiced rum (such as Capt. Morgan';s) when you are adding the nutmeg. The cake becomes even more moist!!"

Delicious....but upon reading the some of the other reviews, my onions also burned. Next time, I will lower the temp to 325 or 350 degrees! Other than picking out black onions, the potatoes were a hit!!!"

Reviewed Eggplant Gratin

Jan 16, 2013 in Food Network Community Toolbox on FoodNetwork.com

For years, my husband has claimed his mother's eggplant parmesan (recipe long lost) was the best he'd "ever" tasted. Through many ~great, but not quite the same~ attempts to replicate this devine gem, I finally tried Ina's Eggplant Gratin!! Well, he rated it "better" than his mother's, and quite frankly, it truly is the best! So easy and with s"

Reviewed 1770 House Meatloaf

I made this recipe exactly as written (in Ina's new book, Foolproof). I thought the meatloaf rocked!!! It's all the fresh herbs, though maybe next time I would cut down on the salt a tad. Making the garlic sauce, I used store bought stock with low sodium and it turned out perfect! However, the meatloaf could stand alone, it was that good! And a"

Reviewed Chicken Salad Contessa

Loved this chicken salad. The nuts, grapes and the fresh tarragon put Ina's recipe over the top! And as other reviewers have mentioned...what's with the "too much salt" comments? Always salt and pepper to your taste, and take into accout, if you are using a store bought rotisserie chicken, they are heavily salted already! It's easy to see why t"

Reviewed Lobster and Shells

This was absolutely delicious. Lobster prices are down this summer and readily available at the market. I did add peas as some reviewers suggested. However, when posting a review of a "lobster and pasta" salad, how in heavens name can you possibly give any rating if you're using chicken thighs or cucumbers as a substitute for the lobster? "

Reviewed Roasted Sausages and Grapes

Okay....I thought I'd buy "turkey" $ausage at Whole Foods. That said, I did not parboil them. However, I did follow the exact recipe. The grapes and sauce were to die for....the sausage was as dry as dust. Sometimes you just need to follow the recipe if that's what you want to do, and do NOT try and get healthy or change anything in any way sha"

This was an excellent salad and seeing Dustin Walls on the show was awesome. He was instrumental in helping my best friend (who has mutiple disabilities) and I have, what I think was, a wonderful dining experience at The Lady & Sons many years ago. ""
