One dessert I crave from time to time is banana pudding, especially in the summer. This is THE ONE!! One alteration I've made is that I use chunked up (aggression with the rolling pin!) chocolate almond biscotti instead of the cookies. Regardless of the cookies, this is scrumptious.

I also thought the frosting was not light enough, so I put only half the powdered sugar. Today I'm making it again and think I'll fold in whipped cream as you suggested.

I've made tortilla soup quite a bit, but this is my new recipe. With all due respect to mamoobarbie, I did make a couple alterations.
