This recipe is almost identical to the mashed potato salad I grew up eating and make now on a regular basis. My grandmother from eastern Kentucky made this and we would eat it hot and then enjoy cold leftovers. Lots of regular mustard and big chunks of dill and gherkin pickles are crucial. I've just watched this segment on The Best Thing I Ever Ate" and the recipe follows the shoe to the "T" EXCEPT for the garlic. To address Thorny4pie's comments below: Guy did not use garlic from the jar, he roasted it himself. He carmalized RED Onions in oil. The onion mixture was not pureed and the balsamic vinegar was only added to the dip."
