"This was a nice light, crunchy biscotti. I dipped them in semi sweet chocolate for a finishing touch. My only negative comment is that 1/2 of the cookies broke when I was slicing them. With this in mind, I don't think I would make them as a gift. But for regular eating, they were very tasty."

"Love Ina. Did not love this recipe. My bay scallops were not substantial enough; it was like eating lima beans one at a time, And my bowls were too large for the portion size so that you could see the scallops swimming in a large pools of butter. The prosciutto flavor was lost too. Even if everything were perfect, I think this dish would still be just ok."

"Awesome. This is so tasty, with a little bit of spice, but not too much. Have to admit I used the regular Essence and fresh parsley (instead of rosemary), as I already had these on hand. My prep and cooking time amounted to 2 hours. I have not been a fan of Emeril's recipes because they have been too involved for the end result, but this one I really did like."
About Me
I like to cook new recipes to challenge myself, and I like to review them to help other cooks. I cook on a 5 burner Thermador stove top and with a Kitchen Aid double oven. Other than cooking, I am a stay at home mom to 2 toddlers. I am usually hopeful that they will eat what I am making, but so far, I have not been too successful with this. But maybe in time they will learn to appreciate foods more complex than chicken nuggets and peanut butter and jelly. Maybe.
