I am watching my weight, so I could not use all the carbs from 4 cups of apple juice. So, I did 4 cups water, with 1 cup apple juice, 5 Splenda packets, and I added 3 drops of peppermint extract.

When served over ice, the drink has a nice, light flavor. No, I am not "raving" over it, but I find I get tired of drinking just water....

Although I did not add the anchovies, I made this dish and LOVE it. I did add a teaspoon of balsamic vinegar, as it needed a little more sweetness, but wow, oh wow, is this good. Do be sure to add the parmesan cheese, as it just perfects this dish.

Oh, I am craving some right now!
