Reviewed Curried Chicken Salad

This recipe is very easy to veganize. I made it for a potluck with a few vegan friends. I substituted extra firm tofu for the chicken, currants for the raisins, Veganaise for the mayo, and served the cashews on the side. It was delicious, easy to make, and versatile."
