Reviewed Lemon Blueberry Pancakes

Sep 29, 2011 in Food Network Community Toolbox on FoodNetwork.com

I am not a fan of pancakes or the boxed mixes. I tried this for my kids and we all absolutely loved them!!! The aroma and flavor are so refreshing , with a nice balance of tang and fruityness and just enough sweetness to wake you up. They have become perfect for summer breakfast and will continue through winter also.""

I will agree the timing isn't correct. I used 2 cups of broth and very low heat and it did stick and burn. We still ate the top part and thought it was delicious. I will try again and maybe check halfway through. Adding cumin and some cilantro at the end sounds good too."

I have never made crepes so I admit to being intimidated by them, but the sauce looked decilcious so I wanted to use it somehow. I made the poblano sauce and used it to make enchilada casserole. Layered- sauce, tortilla, diced chicken, queso fresco and repeated layers topping with more queso fresco. It was delicious even my toddlers liked it....

Reviewed Sweet Cinnamon Flavored Oatmeal Drink ("Horchata"

Nov 16, 2010 in Food Network Community Toolbox on Food Network

I try using oats in as many forms as possible for its nutritious content. Although tasty, personally I didn't care for the slimy feel. I did add more water and double the cinnamon also vanilla. My 2 toddlers loved it, so I will be making it for them again. This is still a healthier option for horchata.

Reviewed Chocolate Margarita

I added only 1/2 the tequila, and it was good. Personally I didn't get enough of the chocolate and thought the orange and almond was more prominent. I will try again and add more chocolate liqueur and cut back on the almond and orange liqueur. This is a great dessert drink!!

Can anyone tell me if you can substitute fresh blueberries for frozen? I wonder if it would change the texture. I can't find fresh ones anymore.

As I was gathering the ingredients for this recipe I also noticed how it isn't clear how many Maria cookies are needed. I reviewed the video and compared it to the recipe and it is definitely more than 10 since she did fill the food processor. I figured 10 ounces of grahams will be about 2 1/2 roll pkgs of Maria cookies. I will be making it and...
