Reviewed Emeril's Most Kicked-Up Meatloaf Ever

I can't remember if I've reviewed this before, but I just LOVE it. This is my favorite meatloaf ever, and I make it about every 2 weeks. I don't always add the heavy cream--it kind of depends on how the mixture looks. It's SO delicious!

Also, I wonder if Anne's recipe is more like Oeufs Mayonnaise, which they do in France. They're much more mayonnaisey than anything I've ever had in the US, and it's usually homemade mayo. My American palate likes the more yolky filling, though.

These were really yummy! I just used truffle oil and reduced the mayo to 4 tablespoons, and it was plenty for my taste. Took them to a party and didn't have a single one to bring home. Will be making these again. :>
