Every once in a while, we long for something rich and delicious. This recipe hit the mark. I do agree that the onions needed to caramalize more than 7 minutes. We saute ours, covered, 10-14 minutes and then uncover and cook 5 minutes more - has worked for us for years. Often we use 2 large onions. The recipe is easily halved to serve 2."

We liked the recipe, but included twice the amount of sun-dried tomatoes and scallions after following the recipe exactly the first time.
