I was a curd 'virgin' until I used this recipe. I did skimp a little bit on the sugar, using 1 very rounded cup instead of 1.5C and it's still plenty sweet. I skipped the 'peeling the zest + add to food processor' part and just used a microplane to shave off the the zest straight into my sugar. The fewer dishes to dirty, the better IMO... I used...

I've never made curd before, this recipe was my first attempt and it came out perfect. I did skimp a little bit on the sugar, using about 1 very rounded cup instead of 1.5C. I used 4 lemons total, 3 very juicy Meyer lemons and 1 store bought lemon. One problem though....I can't keep my spoon out of the now-cooling curd! It's SOOO good!
