Wonderful flavor, and I love the layered heat and other flavors in it. But I've learned that this is one recipe that you want to do all of the prep. _before_ you get started. Also, letting it cook for the whole two hours is highly recommended. That makes a big difference.

This is absolutely fantastic. I've been trying marinades for a long time now over the years and the others I've tried were just OK, but this is wonderful. I only marinated for about 4 hours, sitting out at room temperature, too. I used red whine vinegar, 3 bay leaves and about 1 or 2 teaspoons of dried oregano. Thank you! "
