"Made this a few weeks ago, because I had some leftover fennel. I didn't add the bacon, and we loved it. We're having it again tonight, so I wanted to comment.
I used thinly sliced red onions instead of scallions and added celery.

I added the pepper and doubled the spinach and very little salt at the end.
It was delicious.

"Used Aidell's chicken meatballs, thai basil (last of the season, unfortunately) and mint. I used just a bit of kosher salt and the low-sodium soy sauce and added red pepper flakes to the dressing. Definitely not too salty. We loved it. ""
