Reviewed Roasted, Smashed and Loaded Potatoes

"These were so tasty and overall very simple to make. I forgot to pick up scallions at the store, so instead, I ran out to my little herb patch and picked some fresh chives to slice over the top of the potatoes. I really, really liked the cheese on top - next time I am thinking of changing it up with a different cheese. And at this time, no idea"

About Me

My husband has said more than once that if he got as good of food eating in a restaurant as he gets at home, he wouldn't mind eating out.  That said, I LOVE to cook and bake.  I'm always on the outlook for something new and different.  Trouble is, in our little rural community, some ingredients are hard to come by, so improvisation is a necessity.  Not only do I love to cook, but I'm an avid scrapbooker.  I not only scrapbook for my family but I will do consignment work for others.  The one thing I absolutely HATE to do - clean.  However, to keep from being turned into the health department, that is something I end up doing.    We have a 2 year old granddaughter who lives close, so we spend as much time playing with her (i.e. spoiling) as we can!  Our little family is very close knit and means the world to me.  They ALWAYS will come first in my book!  (We have 2 adult daughters, who both luckily live less than 2 hours away, one wonderful son-in-law that we love like he was born into our family and an almost son-in-law that we think the world of, too!)  Daniel and I have been married for 32 years and he's by best friend by far!  I am a very blessed woman and I am very aware of just how lucky I truly am!

Favorite Foods

I don't think there is enough room to post all of my favorite foods!  I. Love. Food.  

My dislikes are easier:  No liver (unless it's Rumaki in a chinese restaurant), not big on cooked spinach, kale or greens of that type (however, I loved raw spinach), LOVE the fragrance of rosemary, but don't like the flavor, not a big lover of curry dishes or cajun dishes.  I'm a carnivore.  I do eat vegetarian once in a while, but do love meat in a meal.  And, I'm not picky about the meat.  I love chicken, seafood, beef, pork....however, not a lamb lover.  Just set it down in front of me, and chances are, I'll eat it!
