Very tasty! I replaced mozzarella cheese with aged white cheddar and I used 1% milk instead of whole for the sauce - it was perfect. I only had 4 ounces of thinly sliced pancetta - next time I will use double to add more flavor - but not triple which is what the recipe asks for. Watched the cooking show and I just made these bars using a 9-inch pan instead of 8 inch. They were perfect!! Also, I added about 1/3 of a cup of fresh crushed raspberries to 1 cup of store bought raspberry jam - probably cut the sweetness a little bit and they were so yummy!
