"These were great. A simple enchilada recipe. The corn adds a sweet crunch to balance out the spicy chipotle. I used flour tortillas because my family doesn't like corn, and I always make extra sauce. It was a big hit. It made 2 trays, I froze one for later. Everyone loved these enchiladas!
