I like to use vanilla pizzelle cookies as the shell and form them around a dowel as soon as I pull them off of the iron and let them cool on a rack. I also like to dip the open edges into dark chocolate. You can then leave them to set up, or dip them into nuts, mini chocolate chips or chocolate shavings ( I like coarsely chopped pistachio myself)....
